The Torta Traditionby Linda Taafe Through her cultural cooking classes Nelly Capra is keeping the art of making Italian torta from becoming a lost tradition. Since moving from her homeland of Genoa, Italy in 1992, Nelly has taught language and cooking classes at Draeger's in Menlo Park, at the Los Altos, Palo Alto, and Santa Clara Adult schools, at Tante Marie's in San Francisco, and at Sur la Table in Berkley and San Francisco. Nelly describes her classes as cultural occasions, where she tries to teach the relationship between geography, history, food, and language. She often does this through theme classes such as her "Carnevale" class, which centers around the traditions of the Italian Mardi Gras. She has also catered numerous parties and has hosted workshops, hands-on instruction and cooking parties for special celebrations such as birthdays, anniversaries, or bridal showers. She is also writing a book on Italian cuisine. |
